Easy King Prawn Biryani
Biryani is the paella of Indian food. Traditionally, it's baked in a clay pot for hours, but our easy twist with succulent king prawns is ready in thirty minutes! All Health Hub recipes meet one of these criteria: <600 calories, 3 of your 5/day, or a source of protein.

Peel and dice your brown onion[s]

Heat a large, wide-based pan (preferably non-stick with a matching lid) with a generous drizzle vegetable oil over a high heat
Once hot, add the diced onion, your curry powder and a pinch of salt and pepper
Cook for 2 min or until starting to soften

Meanwhile, trim and cut your green beans in half

Sprinkle your vegetable stock mix into the pan and add your tomato paste
Tip: Add a drizzle of oil if the pan looks a little dry
Stir in your basmati rice

Add 300ml [390ml] [600ml] cold water to the pan and bring to the boil over a high heat
Add the halved green beans and your sultanas
Once boiling, reduce the heat to very low and cook, covered, for an initial 10-12 min or until most of the water has absorbed

Once the rice has absorbed most of the water, drain your king prawns and add them to the pan and cook, covered, for a further 5 min or until everything's cooked through
Tip: Add a splash more water if the rice is not fully cooked or the mixture is looking a little dry

Once cooked, fluff the rice with a fork
Taste for seasoning, adding more salt and pepper if needed – this is your king prawn biryani

Serve the king prawn biryani with a dollop of natural yoghurt on top
