Double Cheese Pepperoni Pizza With Garlic & Herb Dip
Double cheese? Yes please. You'll load your pizza bases with tomato sauce before layering on mozzarella, cheddar and plenty of smoky pepperoni. Bake it till bubbling and serve with creamy garlic and herb dip.

Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ gas 6
Put a large baking tray (or two!) in the oven to heat up (this will stop your pizza bottoms from going soggy!)
Drain and pat your mozzarella dry with kitchen paper (squeeze as much liquid out as you can!)
Tear the drained mozzarella into rough, bite-sized pieces
Grate your cheddar cheese
Peel and finely chop (or grate) your garlic
Add your tomato paste to a small bowl with your dried oregano, chopped garlic, 1 tsp [1 1/2 tsp] [2 tsp] sugar and generous pinch of pepper
Add 4 tbsp [6 tbsp] [8 tbsp] cold water and stir it all together – this is your tomato base
Remove the heated tray[s] from the oven and add your pizza base[s]
Divide the tomato base between the pizza base[s] and spread it evenly all over them with the back of a spoon
Top with the torn mozzarella, your pepperoni and the grated cheddar cheese
Tip: Cooking for 2 or more? Make sure the pizzas don't overlap on the tray to avoid raw dough!
Put the tray[s] in the oven for 13-15 min or until the cheese has melted and the base is crisp – this is your double cheese pepperoni pizza
Serve the double cheese pepperoni pizza with the garlic & herb dip to the side
