Crunchy Kimchi Loaded Meat-Free Hot Dog

Picture yourself poolside with this twist on BBQ classic. You'll toss grated carrot through spicy kimchi ketchup before loading it onto your juicy meat-free hot dog. Serve with crispy potato cubes and lettuce on the side.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Cut your potatoes (skins on) into small cubes

Step 1

Add the diced potato to a baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and give everything a good mix up

Add your meat-free hot dog sausage[s] to the other side of the tray[s]

Put the tray[s] in the oven for 20-25 min or until the sausage is cooked through and the potatoes are golden and crisp

Wash your lettuce, pat it dry with kitchen paper and chop into quarters, lengthways – these are your lettuce wedges

Top, tail, peel and grate your carrot[s]

Add your kimchi ketchup (can't handle the heat? Go easy!) and half your rice vinegar (you'll use the rest later!) to a small bowl and stir it together

Add the grated carrot to the bowl with little salt and toss – this is your kimchi-spiced carrot

Cut a slit into the top of your hot dog bun[s]

Once everything is nearly ready, remove the tray[s] from the oven and add the sliced hot dog bun[s]

Return the tray[s] to the oven for 2-3 min or until warmed through

To build, add a meat-free hot dog to a warmed hot dog bun, top with the kimchi-spiced carrot (not a fan of spice? Just add a little!) and sprinkle with half your toasted sesame seeds – this is your kimchi-spiced carrot loaded meat-free hot dog

Serve the kimchi-spiced carrot loaded meat-free hot dog with the crispy potato cubes to the side and garnish with the remaining toasted sesame seeds

Serve the lettuce wedges to the side and dress with a drizzle of olive oil and the remaining rice vinegar
