Crispy Chicken With Mushroom & Parsley Orzo

This perfectly simple recipe only needs minimal prep before you pop it in the oven – and the result is a real crowd-pleaser! Creamy orzo rich with cheese, fresh parsley, leek, mushrooms and a savoury chicken stock, crowned with crispy golden chicken. Serve it up family-style and tuck in!

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Before you start cooking, take your chicken out of the fridge, open the packet and let it air, then preheat the oven to 220°C/ 200°C (fan)/ gas 7

Add your chicken thighs to a baking tray (or two!) with a generous drizzle of olive oil and a pinch of salt and pepper

Put the tray[s] in the oven for 20 min or until the chicken is cooked through (no pink meat!)

While the chicken is cooking, cut your leek[s] in half lengthways and wash carefully to remove any grit from between the leaves, then top, tail and slice finely

Peel and finely chop (or grate) your garlic

Boil a kettle

Tear your white cup mushrooms into rough, bite-size pieces

Dissolve your chicken stock mix in 400ml [600ml] [800ml] boiled water

Add your orzo, chopped garlic, sliced leek, and white cup mushrooms to an oven-proof dish

Pour over the chicken stock, making sure all of the orzo is covered

Put the dish in the oven for 20-25 min or until the orzo is tender with a slight bite

Meanwhile, chop your parsley finely, including the stalks

Grate your cheddar cheese

Use the remaining time to clear up, set the table, have a cup of tea or simply chill!

Once the orzo is cooked, stir half the chopped parsley (save the rest for garnish!) and all the grated cheese through the orzo

Season with a generous pinch of salt and pepper – this is your mushroom & parsley orzo

Serve the mushroom & parsley orzo topped with the crispy chicken

Season with a generous grind of black pepper, garnish with the remaining chopped parsley and drizzle with some olive oil
