Creamy Tuscan Tomato & Mozzarella Tortellini Soup
Whip up a taste of Tuscany in a matter of minuti. You'll rustle up a speedy tomato broth with shallot and basil before tossing in your tortellini and spinach. Finish off with a scattering of grated Italian cheese.

Before you begin...
Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg

Now, let's get started!
Boil a kettle
Peel and finely chop your shallot[s]
Peel and finely chop (or grate) your garlic

Heat a pot over a medium-high heat with a drizzle of olive oil
Once hot, add the chopped shallot and cook for 2-3 min or until starting to soften

Once softened, add the chopped garlic and your tomato paste with 2 tsp [3 tsp] [4 tsp] sugar
Cook for 1-2 min or until fragrant

Once fragrant, add your chopped tomatoes, dried basil, vegetable stock mix and 200ml [250ml] [340ml] boiled water and then bring to a boil

Wash your spinach then add it to the pot with your tomato & mozzarella tortelloni
Cook for 3-4 min or until cooked with a slight bite

One done, stir through your double cream – this is your creamy Tuscan tomato & mozzarella tortellini soup

Serve the creamy Tuscan tomato & mozzarella tortellini soup
Garnish with your grated Italian hard cheese and a good grind of black pepper
