
Creamy Tomato & Pancetta Conchiglie
This tasty one-pot pasta dish marries crisp, golden-fried pancetta lardons with creamy soft cheese, conchiglie pasta and fresh chives to make a wonderfully satisfying meal in mere minutes. Creamy, dreamy, comforting and on the table in a flash – just what everyone needs at the end of a long day!

Instructions for 2 [for 3] [for 4] portion recipe.
Boil a kettle
Heat a large pot with a matching lid, with 1 tbsp [2 tbsp] olive oil over a medium-high heat
Once hot, add the pancetta lardons
Cook for 4 min or until crispy and starting to brown

Meanwhile, peel and finely chop (or grate) the garlic
Dissolve the chicken stock cube[s] in 500ml [1L] boiled water

Add the chopped garlic, dried oregano, chopped tomatoes, conchiglie and chicken stock to the pancetta with 1 tsp [2 tsp] sugar

Cover with a lid and bring to the boil over a high heat
Cook for 7 min
Tip: stir occasionally to ensure that the pasta has not stuck to the base of the pot

Meanwhile, chop the chives finely

After 7 min, remove the lid from the pasta
Stir continuously for 4-5 min or until a sauce has formed and the pasta is cooked, adding more water if it looks too dry
Tip: stirring the sauce releases the starch from the pasta making it naturally creamier!

Once the pasta is cooked, remove the pot from the heat and stir in half of the chopped chives and the soft cheese

Serve the pasta and garnish with the remaining chopped chives and a good grind of pepper
