Creamy Sun-Dried Tomato Salmon With Roasted Potatoes
Roasted cherry tomatoes and crispy garlic potatoes take this salmon stunner to new heights. Top salmon with sun-dried tomato, basil and cream cheese then roast until perfectly cooked. Under 600 calories

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and take a little butter out of the fridge and set aside to soften
Chop your potatoes (skins on) into bite-sized pieces
Add the chopped potatoes to a baking tray (or two!) with a small drizzle of vegetable oil and a pinch of salt and pepper
Give everything a good mix up and put the tray[s] in the oven for an initial 10-15 min

While the potatoes are cooking, zest half your lemon[s] (try to grate lightly with a micro-plane or sharp box grater and avoid grating the white pith, as this is very bitter)
Roll your lemon[s] with your hand on a hard surface (to release more juice) and cut into wedges
Peel and finely chop (or grate) your garlic
Chop your sun-dried tomatoes roughly

Add 1 tsp [1 1/2 tsp] [2 tsp] of your softened butter to a large bowl with half your dried basil (you'll use the rest later!), the chopped garlic, lemon zest and a pinch of salt and mix it all together – this is your herby butter

Add the remaining dried basil and chopped sun-dried tomatoes to a separate small bowl
Add your soft cheese to the bowl with a squeeze of lemon juice and a pinch of salt and give everything a good mix up – this is your sun-dried tomato mix

Add your salmon fillet[s] to a separate tin foil-lined tray with your cherry tomatoes then spread the sun-dried tomato mix over the top of the salmon fillet[s] – this is your sun-dried tomato salmon
After the potatoes have had an initial 10-15 min, put the tray with the salmon in the oven for 14-15 min or until the salmon is cooked through and the potatoes are golden and crisp
Tip: Your fish is cooked once it turns opaque and flakes easily

Boil a full kettle
When everything is almost ready, wash your spinach then add to a colander and pour boiled water all over it so that it starts to wilt
Drain the spinach and squeeze any excess water out with the back of a spoon – this is your wilted spinach

Add the cooked potatoes and cooked cherry tomatoes to the bowl with the herby butter and give everything a good mix up – these are your garlic potatoes & cherry tomatoes

Serve the sun-dried tomato salmon with the garlic potatoes & cherry tomatoes
Serve the wilted spinach to the side
Garnish with a lemon wedge
