Crab Mac 'N' Cheese

How do you make mac 'n' cheese fancy? Add sweet crab, a sprinkling of chives and a dollop of Cornish clotted cream. To finish the dish, top with cheesy breadcrumbs and bake 'til golden. Mac-tacular!

You'll also need

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Boil a full kettle

Peel and finely chop (or grate) your garlic

Add your tortiglioni to a pot of boiled water with a large pinch of salt and bring to the boil over a high heat

Cook the tortiglioni for 7-9 min or until cooked with a slight bite

Once done, drain the tortiglioni and return to the pot with a drizzle of olive oil

While the tortiglioni is cooking, heat a large, wide-based pan (preferably non-stick) over a medium heat and melt 15g [25g] [30g] butter

Once melted, add the chopped garlic and cook for 1-2 min or until fragrant

Once fragrant, add 15g [25g] [30g] flour and stir with a wooden spoon for 1-2 min or until a sandy paste forms – this is your roux

Gradually whisk 300ml [450ml] [600ml] milk into the roux, a little at a time, and cook for 5 min or until a smooth, thick sauce remains – this is your béchamel sauce

Meanwhile, grate your cheddar cheese

Combine 1/4 of your grated Italian hard cheese (save the rest for later!) with your panko breadcrumbs, a pinch of salt and a drizzle of olive oil in a small bowl – these are your cheesy breadcrumbs

Add the drained tortiglioni to the pan with the béchamel sauce

Break up your crab meat gently with a fork, then stir it through with your clotted creamgrated cheddar cheese and remaining grated Italian hard cheese

Chop your chives finely, then add into the pan, season with a generous pinch of salt and grind of black pepper and give everything a good mix up until the cheese has melted

Transfer the mixture to an oven-proof dish

Top with the cheesy breadcrumbs and put the dish in the oven for 20-25 min or until golden and bubbling – this is your crab mac 'n' cheese

Meanwhile, wash your salad, then pat it dry with kitchen paper

Chop your tomato[es] roughly and add to a bowl with the salad, balsamic vinegar and a drizzle of olive oil – this is your dressed salad

Top your crab mac 'n' cheese with a generous grind of black pepper and serve the dressed salad to the side
