Coronation Chicken Couscous

Toaster, microwave or kettle-friendly – this is dinner without the cooking. You'll toss sultana couscous with cooked chicken and leafy greens before smothering the lot with a creamy coronation chicken dressing.

Before you begin, get all your ingredients and equipment ready

Skim through these steps, then wash your fruit and veg

You can only heat your food once, then enjoy straight away

Note: Microwave ovens vary. Make sure you heat food thoroughly (even if it takes you a little longer than 10 min)

Now, let's get started!

Boil half a kettle

Add your couscous, sultanas and chicken stock mix to a large heatproof bowl with 200ml [300ml] [400ml] boiled water

Cover and set aside until all of the liquid has been absorbed

Wash your salad, then pat dry with kitchen paper

Wash your lettuce, then pat it dry with kitchen paper and roughly shred

Combine your curry powder and ginger & garlic paste in a small heatproof bowl with a knob of butter

Put the bowl in the microwave and cook for 30 secs or until the butter is melted

Once the butter has melted, add your mayo with 1 tbsp [1 1/2 tbsp] [2 tbsp] cold water and stir it all together – this is your coronation dressing

Once everything is ready, add your cooked shredded chicken, salad and shredded lettuce to the couscous with most of your coronation dressing (save some for garnish!)

Serve the coronation chicken couscous salad and drizzle with the remaining coronation dressing

Sprinkle with your flaked almonds and finish with a grind of black pepper
