Classic Cottage Pie With Broccoli
With over 2 of your 5-a-day, this classic pie is comforting and deliciously satisfying. You'll combine tender beef mince with caramelised onion and carrot. Top with delicious creamy mashed potato and grated cheese, bake until golden and serve with broccoli for a winning family dinner! (Gluten-free, suitable for coeliacs.)

Instructions for 2 portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Boil a kettle
Peel the potatoes and cut them into small bite-sized pieces
Add the chopped potatoes to a pot of boiled water with a generous pinch of salt, bring to the boil over a high heat and cook for 10 min or until fork-tender
Once done, drain and return to the pot to steam dry

Meanwhile, re-boil a kettle
Peel and finely chop the red onion[s]
Top, tail, peel and dice the carrot[s]
Peel and finely chop (or grate) the garlic

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium heat
Once hot, add the chopped onion, carrot and garlic and cook for 3-4 min or until beginning to soften
Meanwhile, dissolve the beef stock cube[s] in 200ml [400ml] boiled water (for a lower salt option, use half!) and add the tomato paste and Henderson's Relish – this is your tomato stock

Once your vegetables have softened, add the beef mince and cook for 3-4 min or until browned, breaking it up with a wooden spoon as you go
Add the tomato stock to the beef mince and bring to the boil
Once boiling, reduce the heat to medium and cook for 8-10 min or until the liquid has reduced by half – this is your beef mixture
Meanwhile, grate the cheddar cheese

Return the drained potatoes to a low heat with a large knob of butter, a splash of milk and a generous pinch of salt and pepper
Mash until smooth – this is your creamy mashed potato

Once the beef mixture has thickened, transfer it to an oven-proof dish (or individual ones)
Top the beef mixture with the creamy mashed potato
Sprinkle over the grated cheese
Put the dish in the oven for 15-20 min or until golden brown and bubbling – this is your cottage pie

Meanwhile, re-boil a kettle
Cut the broccoli into florets
Add the broccoli florets to a pot with plenty of boiled water and bring to the boil over a high heat
Once boiling, cook for 4-6 min or until tender with a slight bite
Once done, drain the broccoli and season generously with salt and pepper

Serve the cottage pie with the broccoli to the side
