Christmas Turkey Burger

What happens when your Christmas dinner walks through an American diner? This happens. Our Christmas burger boasts a turkey patty, crowned with a sweet cranberry and onion relish. Served with a fresh apple & Brussels sprout slaw! A-meri-Christmas!

Ingredients for 2 people

Cooking instructions

Instructions for 2 portion recipe.

1.

Preheat the oven to 240°C/ 220°C (fan)/ 475°F/ Gas 9

Cut the potatoes into chips (approx. 1cm thick), keeping the skins on

Place on an oven-proof tray and coat well with 1-2 tbsp vegetable oil and season generously with salt and pepper

Put in the oven for 30 min or until they are golden and crisp, turning once

Combine the turkey mince and breadcrumbs with 1-2 tbsp olive oil and season generously with salt and pepper

Mix with clean hands, cover and refrigerate for 15 min

Tip: Chilling the mixture helps the burgers to hold their shape better

Boil a kettle for the next step

Chop the dried cranberries finely

Peel and finely slice 1/2 (1) of the red onion(s)

Add 1-2 tsp olive oil to a pot over a medium heat

Once hot, add the sliced red onion and the cranberries and cook for 2 min

Add 200ml (300ml) boiling water

Cook for 15-20 min or until most of the water is absorbed

Combine the mayonnaise and vinegar with 1 tbsp (2 tbsp) olive oil and a pinch of salt and pepper in a bowl large enough for the slaw

Grate the Brussels sprouts, apple and the remaining red onion into the bowl

Stir well to combine - this is your slaw

Shape the turkey mince into 2 (4) patties (using wet hands)

Heat a pan with 1 tbsp (2 tbsp) vegetable oil over a medium heat

Once hot, add the patties and cook for 2 min on each side or until coloured

Transfer them to the chip tray and cook in the oven for the remaining 10 min or until cooked through

Heat a large, dry pan on a medium heat

Cut the brioche buns in half

When the pan is hot, add the brioche buns cut-side down and cook on one side only for 3 min or until lightly toasted

Once toasted, set aside until serving

Serve the turkey burgers inside the toasted buns with the cranberry sauce spooned over

Serve the chips and slaw to the side
