Chipotle-Glazed Meat-Free Hot Dog With Smashed Avo & Salsa
This Tex-Mex-inspired hot dog will have you drooling. You'll load your meat-free hot dog with lashings of smashed avocado and pickled shallot, before drizzling over the chipotle glaze. Finish with chips and salsa to the side.

Instructions for 2 [for 4] portion recipe.
Preheat the oven to 220ºC/ 200ºC (fan)/ gas 7
Cut your potatoes (skins on) into chips
Add the chips to one side of a baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper

Add your meat-free hot dog sausage[s] to the other side of the baking tray[s] and put the tray[s] in the oven for 25-30 min or until the sausage[s] is cooked through and the chips are golden and crispy

Peel and finely chop your shallot[s]

Combine half your white wine vinegar (you'll use the rest later!) with 1 tsp [1 1/2 tsp] [2 tsp] sugar and add the chopped shallot – these are your pickled shallots

Chop your tomato[es] finely

Combine your chipotle paste (can't handle the heat? Go easy!), your remaining white wine vinegar and 1 tsp [1 1/2 tsp] [2 tsp] sugar with a knob of butter and a little pinch of salt in a small heatproof bowl
Put the bowl in the microwave and cook for 20-30 secs or until the butter is melted
Give it a good mix up – this is your chipotle glaze

Once everything is almost ready, remove the tray[s] from the oven and drizzle a little of the chipotle glaze (save some for later!) over the meat-free hot dog sausage[s]
Cut a slit into the top of your hot dog bun[s]
Add the hot dog bun[s] to the tray
Return the tray to the oven for 2-3 min or until the bun[s] is warmed through

To build, add the glazed hot dog to the warmed hot dog bun and top with the smashed avocado, a drizzle of the chipotle glaze and half the pickled shallot – this is your chipotle-glazed hot dog
Combine the remaining pickled shallot with the chopped tomato, a little olive oil and a pinch of salt and pepper – this is your salsa
Serve the chipotle-glazed hot dog with your chips and salsa to the side
