Chimichurri Patties

Chimichurri is an Argentinian steak sauce - a form of pesto if you like, but without the cheese or nuts. It's vibrant, green, and has a sharpness and slight chilli kick to it. This means it's cuts through our bunless burger and sweet potato wedges like nothing else. Chimichurri Chimichurri Chim Chim Chi-roo!

Ingredients for 2 people

20g fresh parsley
20g fresh parsley
300g British beef mince
300g British beef mince
500g sweet potatoes
500g sweet potatoes
1 tbsp cornflour
1 tbsp cornflour

2 tsp ground coriander

2 tbsp white wine vinegar
2 tbsp white wine vinegar
1 tbsp dried oregano
1 tbsp dried oregano

You'll also need

Olive oil, Pepper, Salt, Vegetable oil (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the sweet potatoes, with skin on, lengthways into 3cm wedges

Toss the wedges in cornflour, 1-2 tbsp of vegetable oil, and salt and pepper to taste

Place on 1(2) baking tray(s) and leave some space between each wedge

Roast for 20 min or until starting to turn golden

Once golden, remove the tray from the oven for step 7

Meanwhile, roughly chop the parsley (including the stalks)

Peel and finely chop the garlic cloves

Boil the kettle with a small amount of water (used in step 5)

Add the beef mince to a mixing bowl with the turmeric, ground coriander and half of the chopped garlic (save the rest for step 5)

Season generously with salt and pepper

Divide the mixture in 2 (4) and shape into burgers (use wet hands to help)

Pop the burgers in the fridge until step 6

Add the chopped parsley, remaining garlic, oregano, chilli flakes, white wine vinegar and 3 tbsp (6 tbsp) of olive oil to a food processor with salt, pepper and 50ml (60ml) of boiled water- blitz until smooth

Tip: Alternatively, use a pestle and mortar, and while coarser, it'll still be delicious

Heat a non-stick pan on a medium heat

When hot, add the burgers and cook on each side for 3 min, until browned on each side

Transfer the burgers to the sweet potato tray(s)

Return the tray(s) back to the oven for 5-8 min, until the burgers are cooked through and the wedges are crispy

8.

Serve the burger patties, wedges, and chimichurri sauce to the side
