Chilli Cheese Toast With Fried Egg & Mango Lassi
Say hello to the Bombay café breakfast of champs. Spike your cheese on toast with chilli and grill till golden. Crown with a fried egg and cool mint and coriander chutney then serve with tamarind ketchup, served with mango lassi

Rise and shine! Before you begin…
Skim through these steps and get all your equipment ready, then wash your fruit and veg
Once done, simply dig in or wrap up ready for your day!
Now, let's get started!
Preheat the grill to high
Grate your cheddar cheese finely
Slice your ciabatta[s] in half
Trim, then slice your spring onion[s] finely
Chop your coriander finely, including the stalks
Cut your green chilli[es] in half lengthways, deseed (scrape the seeds out with a teaspoon) and chop finely (like it hot? Keep the seeds in!)
Add the grated cheese to a bowl with your garam masala, most of the chopped chilli (can't handle the heat? Go easy!) and most of the sliced spring onion (save some for garnish!)
Add your mayo and mix until completely combined – this is your chilli cheese mix
Divide the chilli cheese mix between the ciabatta halves and add to a large baking tray
Put the tray under the grill for 3-4 min or until bubbling and golden – this is your chilli cheese toast
Tip: Cooking for 5? You may need to do this in batches!
Meanwhile, heat a large, wide-based pan (preferably non-stick with a matching lid) with a drizzle of vegetable oil over a medium-high heat
Once hot, crack your egg[s] into the pan
Cook for 2-3 min or until done to your liking
Tip: Give your egg a little shake before you crack for a perfectly centred yolk!
Add your tomato paste and tamarind paste to a small bowl with 2 tbsp [3 tbsp] [4 tbsp] cold water and a generous pinch of sugar
Give everything a good mix up, then add the bowl to the microwave and cook for 30 secs or until warmed through – this is your tamarind ketchup
Serve the chilli cheese toast drizzled with your mint & coriander chutney and topped with a fried egg
Garnish with the reserved chopped chilli (not a fan of spice? Just add a little!), spring onion and coriander
Serve the tamarind ketchup and mango lassi to the side
