Chilaquiles With Tomatillo Salsa
This bright vegetarian dish is crunchy, spicy and adored across Mexico. To make the homemade salsa verde, you'll be cooking with tomatillos, an indigenous Mexican fruit that adds a unique zing to this popular dish.

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6
Chop the coriander finely, including the stalks
Slice a few rings from the green chilli[es] and finely dice the rest
Tip: Deseed if you can't handle the heat!

Combine the crushed tomatillos, juice of 1/2 [1] lime, chopped coriander, diced green chilli (can't handle the heat? Go easy!), 1 tbsp [2 tbsp] olive oil and a generous pinch of salt – this is your tomatillo salsa

Trim, then finely slice the spring onion[s]
Chop the cherry tomatoes in half

Slice the tortillas into strips
Tip: Stack them for speed!

Add the tortilla strips to a baking tray and drizzle them with vegetable oil
Put the tray in the oven for 7-8 min or until golden and crispy
Tip: Cooking for 4? Use 2 trays!

Cut the avocado[s] in half lengthways, around the stone[s]
Remove the stone[s] using a teaspoon
Scoop the avocado out of the skin[s] using a spoon and slice it finely, lengthways

Heat a large, wide-based pan (preferably non-stick with a matching lid), with a drizzle of vegetable oil over a medium-low heat
Once hot, crack the eggs into the pan
Cook, covered, for 2-3 min or until done to your liking
Tip: Give your eggs a little shake before you crack for perfectly centred yolks!

Cut the remaining lime into wedges
Divide the crispy tortillas onto plates and top with the tomatillo salsa
Add the chopped cherry tomatoes and sliced avocado then crumble over the feta
Top with the fried egg and garnish with the sliced spring onion, remaining green chilli and a lime wedge
