Chicken Satay Burger With Pickled Cucumber

This Asian-inspired burger is the definition of East meets West. You'll roast our deliciously juicy chicken burgers before topping with a creamy peanut satay sauce and quick-pickled vegetables. With salt & pepper chips on the side this one will make you thankful you decided to satay in!

Ingredients for 2 people

1 Sriracha hot chilli sauce sachet (8ml)

2 x 140g British chicken burger patties

2 mayonnaise sachets (30ml)

1/2 cucumber

You'll also need

Pepper, Salt, Vegetable oil (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

1.

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6

Cut the potatoes (skins on) into chips

Add the chips to a baking tray with a generous drizzle of vegetable oil and a pinch of salt and pepper 

Give everything a good mix up and put the tray in the oven for 25 min or until starting to crisp

Meanwhile, peel the carrot[s], then continue to peel lengths until you end up with a pile of carrot 'ribbons'

Peel lengths off the cucumber until you end up with a pile of cucumber 'ribbons'

Add the cucumber & carrot ribbons to a bowl with the rice vinegar and a pinch of salt and toss it all together

Set aside to lightly pickle

Add the chicken burger patties to a separate baking paper-lined baking tray 

Put the tray in the oven for an initial 12-15 min or until starting to brown

Meanwhile, add the peanut butter, Sriracha hot chilli sauce (can't handle the heat? Go easy!) and 1 tbsp [2 tbsp] cold water to a bowl and stir it all together – this is your satay sauce

Once the chicken burgers have been cooking for 12-15 min, add the brioche rolls, cut-side up, and return the tray to the oven for 2-3 min further or until the burgers are cooked through (no pink meat!) and the bread is slightly toasted

While the oven works its magic, pick the coriander leaves from their stalks, discard the stalks

Spread the mayonnaise on the top and bottom of the toasted brioche rolls

Assemble each brioche roll with a chicken burger, satay sauce, a handful of pickled cucumber & carrot and some coriander leaves

Serve the chicken satay burger with the chips and pickled cucumber & carrot to the side
