Cheesy Popcorn Cauliflower With BBQ Ketchup, Mustard Salad & Chips

For this veggie twist on a classic you'll coat cauliflower florets in a cheesy breadcrumb before baking until golden brown and crisp. Drizzle with a BBQ ketchup and serve with chips and a Dijon mustard dressed salad.

You'll also need

Vegetable oil, Salt, Pepper, Olive oil, Flour, Water, Sugar (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Cut your potatoes (skins on) into chips

Add the chips to a baking paper-baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper

Give everything a good mix up and put the tray[s] in the oven for 20-25 min or until golden and crisp

Grate your cheddar cheese finely

Add your panko breadcrumbs to a bowl with the grated cheese and your smoked paprika

Add a generous drizzle of olive oil and a pinch of salt and pepper and mix until fully combined – these are your cheesy breadcrumbs

Add 80g [120g] [180g] flour to a bowl with 140ml [210ml] [280ml] cold water and a pinch of salt and pepper and whisk it all together – this is your batter

Coat your cauliflower florets in the batter and then press them into the cheesy breadcrumbs firmly to coat evenly – this is your breaded cauliflower

Add the breaded cauliflower to a baking paper-lined baking tray (or two!)

Put the tray[s] with the cauliflower in the oven for 15-18 min or until golden and and the cauliflower is tender – these are your cheesy popcorn cauliflower

Meanwhile, combine your BBQ sauce and tomato ketchup in a bowl with 2 tbsp [3 tbsp] [4 tbsp] cold water and a pinch of salt and pepper – this is your BBQ ketchup

Trim, then slice your spring onion[s] on the diagonal

Wash your salad, then pat dry with kitchen paper

Add your white wine vinegar and Dijon mustard to a bowl with a drizzle of olive oil and a pinch of salt, pepper and sugar and mix it all together – this is your dressing

Add the salad to the bowl with the dressing and toss – this is your mustard salad

Serve the cheesy popcorn cauliflower with the chips and mustard salad

Drizzle the BBQ ketchup over the cauliflower and garnish with the sliced spring onion
