Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Add your chicken breast portion[s] to a tin foil-lined baking tray (or two!)

Combine your tomato paste and a pinch of your dried oregano (you'll use the rest later!) with 1 tbsp [1 1/2 tbsp] [2 tbsp] cold water and a pinch of salt in a bowl – this is your pizza sauce

Drain your mozzarella, then pat it dry with kitchen paper (squeeze as much liquid out as you can!)

Tear the drained mozzarella into rough, bite-sized pieces

Tear your basil leaves roughly

Spread the pizza sauce over the chicken

Top with the torn mozzarella and torn basil leaves

Put the tray[s] in the oven for 18-20 min or until the chicken is cooked through (no pink meat!) and the mozzarella is melted and golden – this is your cheesy pizza-topped chicken

Wash your salad, then pat it dry with kitchen paper

While the chicken is cooking, chop your cherry tomatoes in half

Slice your cucumber finely

Peel and slice your shallot[s] as finely as you can

Add the halved cherry tomatoes, sliced cucumber and sliced shallot to a large bowl with the salad and give it a gentle mix up – this is your mixed salad

Combine your mayo with your white wine vinegar and remaining dried oregano with 1 tbsp [1 1/2 tbsp] [2 tbsp] olive oil and a pinch of salt and pepper in a separate bowl – this is your creamy dressing

Serve the cheesy pizza-topped chicken with the mixed salad to the side

Drizzle the creamy dressing all over the salad
