Cheesy Mushroom Pizza
Top your pizza with a mix of eat lean cheese and Italian hard cheese. You're finishing touch is a simply dressed rocket and onion salad atop your magnificently mushroomy pizza. All Health Hub recipes meet one of these criteria: <600 calories, 3 of your 5/day, or a source of protein.

You'll also need
Olive oil, Salt, Sugar, Water (or dietary alternatives)

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ gas 6
Put a large baking tray (or two!) in the oven to heat up (this will stop the pizza bottom from going soggy!)
Slice your white cup mushrooms finely
Peel and finely slice your red onion[s]

Grate your lighter cheese and Italian hard cheese finely and mix it all together
Peel and finely chop (or grate) your garlic

Add your tomato paste to a bowl with the chopped garlic and a generous pinch of salt
Add 60ml [90ml] [120ml] cold water with 1/2 tsp [1tsp] [1 1/2 tsp] of sugar and stir it all together – this is your tomato sauce

Remove the heated tray[s] from the oven and add your pizza base[s]
Divide the tomato sauce between the pizza base[s] and spread it evenly all over with the back of a spoon

Top with the sliced mushrooms and most of the sliced onion (you'll use the rest later!)

Sprinkle the pizza[s] with the grated cheese
Put the tray[s] in the oven for 13-15 min or until the cheese has melted and the base is crisp – this is your cheesy mushroom pizza

While the pizza are cooking, wash your salad, then pat dry with kitchen paper
Combine your remaining sliced onion with your salad in a small bowl with a drizzle of olive oil

Season the cheesy mushroom pizza with a generous pinch of salt and top with the dressed salad
Enjoy!
