Cheesy Mash & Lamb Meatball Pie

Pie, oh pie this mash is creamy. For the perfect comfort dish, you'll coat juicy lamb meatballs in a rich tomato sauce before topping them with mash and a sprinkle of cheddar. Bake till golden and dig in while it's hot.

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and boil a full kettle

Peel and chop your potatoes into rough, bite-sized pieces

Add the chopped potatoes to a pot of boiled water with a pinch of salt over a high heat and cook for 10-15 min or until fork-tender

Once cooked, drain and return them to the pot to steam dry

While the potatoes are cooking, peel and finely dice your brown onion[s]

Top, tail, peel and cut your carrot[s] in half lengthways, then slice finely

Peel and finely chop (or grate) your garlic

Add your lamb mince to a bowl with the chopped garlic, dried oregano and a pinch of salt and pepper and mix thoroughly until fully combined (clean hands is the best way!)

Divide and shape the lamb mince into 3 meatballs per person

Add the sliced carrot and diced onion to an oven-proof dish with 1 tbsp [1 1/2 tbsp] [2 tbsp] flour and a pinch of salt and give everything a good mix up

Top with the lamb meatballs, then put the dish in the oven for 10 min or until the meatballs are starting to brown

Meanwhile, grate your cheddar cheese

Return the potatoes to a low heat with a knob of butter and a splash of milk

Season with a pinch of salt and pepper and mash until smooth

Once the meatballs are browned, remove the dish from the oven

Add your chopped tomatoes and beef stock mix to the dish and gently stir everything together

Spread the mash on top carefully, making sure all the sauce is covered

Top with the grated cheese

Put the dish in the oven for 18-20 min further or until golden brown and bubbling and the lamb is cooked through (no pink meat!) – this is your with cheesy mash & lamb meatball pie

Remove the dish from the oven and leave the cheesy mash & lamb meatball pie to stand for 5 min before serving (this helps the flavours to develop and makes it easier to serve!)
