Cheesy Korean Smash Pork & Beef Burger & Kimchi-Style Slaw

This Korean-style burger is a smash hit. You'll load brioche buns with cheesy pork and beef patties before smothering them with spicy gochujang mayo. Finish off with kimchi-style slaw and fries on the side.

Vegetable oil, Pepper, Sugar, Flour (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Cut your potatoes (skins on) into fries

Add the fries to a baking tray (or two!) with a drizzle of vegetable oil and a pinch of pepper

Give everything a good mix up and put the tray[s] in the oven for 25-30 min or until golden – these are your fries

Grate your cheddar cheese finely

Peel and finely chop (or grate) your garlic

Add your carrot & cabbage slaw mix to a bowl with half your gochujang paste (you'll use the rest later!), your rice vinegar, toasted sesame oil, 1/2 tsp [3/4 tsp] [1 tsp] sugar and a small drizzle of vegetable oil

Give everything a good mix up and set aside for later – this is your Kimchi-style slaw

Add your pork & beef mince to a bowl with the chopped garlic and your soy sauce then give everything a good mix up (clean hands is the best way!) – this is your smash patty mix

Divide your smash patty mix into 2 pieces per person, shape into meatballs and transfer them to a clean chopping board sprinkled with 1 tbsp [1 1/2 tbsp] [2 tbsp] flour

Cover the meatballs with a sprinkling of flour and a sheet of baking paper, then flatten with your hand and roll them out to approx. 0.5cm thickness with a rolling pin until evenly flattened – these are your smash patties

Heat a large, wide-based pan (preferably non-stick, with a matching lid) with a drizzle of vegetable oil over a high heat

Tip: Cooking for 3 or more? Use 2 pans!

Once hot, add the smash patties to the pan, press them down very firmly with a spatula and cook for 3-4 min on one side, pressing down continuously, until slightly charred on the base

Once slightly charred, flip the patties over and top with the grated cheese

Cook, covered, for a final 4-5 min or until the cheese has melted and the patties are golden and cooked through (no pink meat!) – these are your cheesy smash patties

Slice your brioche bun[s] in half (if required!)

Once the fries are golden, remove the tray[s] from the oven and place your brioche halves (cut side up!) on top of the fries

Return the tray[s] to the oven for 2-3 min or until warmed through

To build your burger, divide your mayo and the remaining gochujang paste between each warmed brioche base and top with 2 cheesy smash patties

Top with some of the Kimchi-style slaw and a warmed brioche lid – this is your cheesy Korean pork & beef smash burger

Serve the cheesy Korean pork & beef smash burger with the fries and the remaining Kimchi-style slaw to the side
