Cheesy Cod & Spinach Gratin With Crispy Potatoes
Don't let gratin's fancy name fool you, because this is so quick to prepare. You'll layer cod, soft cheese and spinach in a baking dish, top it with cheddar breadcrumbs and serve with crispy potato slices. Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Boil half a kettle
Slice your potatoes (skins on) into discs, approx. 1cm thick

Add the potato discs to a baking tray (or two!), drizzle with vegetable oil, then season generously with salt and pepper
Put the tray[s] in the oven for 20-30 min or until the potatoes are cooked through and crispy – these are your crispy potatoes

While the potatoes are in the oven, dissolve your vegetable stock mix and soft cheese in 100ml [130ml] [150ml] boiled water – this is your creamy stock
Grate your cheddar cheese

Wash your spinach, then pat it dry with kitchen paper and add to an oven-proof dish

Pour the creamy stock all over the spinach

Place your cod fillet[s] on top of the spinach and season with a pinch of salt and pepper

Sprinkle your panko breadcrumbs and grated cheese all over the cod
Drizzle over a little olive oil and put the dish in the oven for 16-20 min or until the cod is cooked through – this is your cheesy cod & spinach gratin
Tip: Your fish is cooked once it turns opaque and flakes easily

Serve the cheesy cod & spinach gratin with the crispy potatoes to the side
