Cheesy Bacon, Egg & Avocado Folded Breakfast Wraps
Start your day right with an all-in-one breakfast wrap. You'll load tortillas with crispy bacon, scrambled egg, avo and cheese before toasting till crispy. Perfect.

Rise and shine! Before you begin…
This recipe can be prepped ahead (if you like!) Let the dish cool completely (within 2 hours max) then cover and store in the fridge overnight and enjoy within 24 hours, in the morning, reheat until piping hot throughout. You can only reheat your food once, then enjoy straight away
Skim through these steps and get all your equipment ready, then wash your fruit and veg

Now, let's get started!
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat
Once hot, add your smoked streaky bacon to the pan and cook for 3 min on each side or until golden and crisp
Once crisp, transfer the bacon to kitchen paper (reserve the pan!) and slice each rasher in half

Crack your egg[s] into a bowl with a splash of milk and pinch of salt and pepper and whisk until fully combined – this is your egg mix
Heat a pot over a medium heat with a drizzle of vegetable oil
Once hot, pour in the egg mix and cook for 2-3 min, stirring frequently, or until the egg is fully cooked through – this is your scrambled egg

Cut your avocado[s] in half lengthways, around the stone
Remove the stone[s] using a spoon, then scoop out the avocado flesh and slice finely
Grate your cheddar cheese

Cut one slit in each of your tortillas from the centre of the tortilla to the edge
Place some of the halved crispy bacon with a dollop of your red chilli relish, a spoonful of scrambled egg, some of the sliced avocado and a handful of grated cheese in each quarter of the tortillas

Fold the tortillas over, one quarter at a time, starting with the bacon over the egg and working round – these are your bacon, egg & avocado folded breakfast wraps
Wipe the reserved pan clean and return to a medium-high heat

Once hot, add your bacon, egg & avocado folded breakfast wraps and cook for 2-3 min on each side or until golden brown, hot through and the cheese has melted (cooking for 4 or more? Do this in batches!) – these are your cheesy bacon, egg & avocado folded breakfast wraps
Tip: Make it the night before! Cool it down quickly (within 2 hours max) and refrigerate. Enjoy within 24 hours, and reheat it until piping hot for a warm brekkie! You can only reheat your food once, then enjoy straight away
