Cheese, Bacon & Pepper Relish Pastry Turnover With Wedges
This bacon-wrapped dinner is fully stacked. You'll rustle up flaky puff pastry turnovers packed with grated cheese, crispy smoked bacon and sweet pepper relish before baking till golden. Serve with oregano wedges and mayo for dipping.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ gas 6
Cut your potatoes (skins on) into wedges
Add the wedges to a baking paper-lined baking tray (or two!) with a small drizzle of vegetable oil, your dried oregano and a pinch of salt and pepper and give everything a good mix up
Put the tray[s] in the oven for 20-25 min or until the wedges until golden and crisp – these are your oregano wedges

Add your smoked streaky bacon to a baking paper-lined baking tray (or two!)
Put the tray[s] in the oven for 6-8 min or until starting to brown
Transfer the cooked bacon to a plate, reserving the tray[s]

Meanwhile, dust your work surface with a generous sprinkling of flour
Unwrap your puff pastry and roll it out to approx. 0.5cm thickness with a rolling pin and cut into 1 square per person

Grate your cheddar cheese

Add the pastry square[s] to the reserved tray[s], spread your sweet pepper relish over the pastry and top with the cooked bacon and grated cheese
Fold two corners of your pastry square[s] over the pastry filling, then pinch together to seal
Put the tray[s] in the oven for 15-18 min or until the pastry is until golden and cooked through – this is your cheese, bacon & pepper relish pastry turnover

Chop your cucumber into quarters lengthways, then slice finely

Wash your salad then pat dry with kitchen paper
Add your red wine vinegar to a bowl with a crack of black pepper and a drizzle of olive oil and give everything a good mix up – this is your dressing
Add the salad and chopped cucumber to the dressing and toss – this is your dressed salad

Serve the cheese, bacon & pepper relish pastry turnover with the oregano wedges, dressed salad and mayo to the side
