Calabrese Pizza With 'Nduja
Calabria is known for its love of fiery chillies, so it's no surprise their popular 'Nduja sausage sizzles with vibrant spicy flavour. Top our flame-baked pizza base with sweet pointed pepper, fresh red chilli and 'Nduja to taste that Calabrian heat at home.

Olive oil, Pepper, Salt, Sugar, Water (or dietary alternatives)
Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ gas 6
Put a large baking tray (or two) in the oven to heat up (this will stop the pizza bottoms from going soggy!)
Peel and finely chop (or grate) your garlic

Add your tomato paste to a bowl with the chopped garlic, dried oregano and a generous pinch of salt, pepper and sugar
Add 4 tbsp [6 tbsp] [8 tbsp] cold water and a drizzle of olive oil and give everything a good mix up – this is your pizza sauce

Drain your mozzarella, then pat and squeeze as much liquid out as you can with kitchen paper
Tear the drained mozzarella into rough, bite-sized pieces

Deseed your sweet pointed pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into thin strips
Slice your red chilli[es] finely (can't handle the heat? Take the seeds out!)

Remove the heated tray[s] from the oven and add your pizza base[s]
Spread the pizza sauce evenly over the pizza base[s]
Tear your 'Nduja into small bite-sized pieces
Top with the torn mozzarella, torn 'Nduja, sliced chilli (not a fan of spice? Just add a little!) and the pepper strips

Put the tray[s] in the oven for 15 min or until the cheese has melted and the pizza base is crispy – this is your Calabrese pizza with 'Nduja

While the pizza is cooking, combine your balsamic vinegar with generous drizzle of olive oil and a pinch of salt and pepper in a small bowl – this is your balsamic dressing
Wash your salad, then pat it dry with kitchen paper

Serve the Calabrese pizza with 'Nduja with the salad to the side
Drizzle the balsamic dressing over the salad and season the pizza with a generous grind of black pepper
