Bolognese Loaded Fries With Balsamic Tomato & Basil Salad

Give loaded fries a meaty Italian twist with rich, tomatoey beef bolognese ragu and crispy, golden chips. Top with cheese, bake till melty and serve with a balsamic tomato and basil salad to finish.

Vegetable oil, Sugar, Pepper, Salt, Olive oil, Water (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Cut your potatoes (skins on) into fries

Add the fries to a baking paper-lined tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper

Give everything a good mix up and put the tray[s] in the oven for 20-25 min or until golden and crisp

Boil half a kettle

Peel and finely dice your brown onion[s]

Peel and finely chop (or grate) your garlic

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat

Once hot, add your beef mince with a pinch of salt and pepper and cook for 3-4 min or until beginning to brown, breaking it up with a wooden spoon as you go

Dissolve your beef stock mix in 150ml [200ml] [250ml] boiled water

Once the beef mince has browned, add the diced onion to the pan and cook for a further 3-4 min or until the onion is beginning to soften

Once softened, add the chopped garlic and your dried oregano and cook for 1 min or until fragrant

Once fragrant, add your chopped tomatoes and the stock with 1 tsp [1 1/2 tsp] [2 tsp] sugar and cook for 8-10 min or until the sauce has thickened to a ragù-like consistency and the beef is cooked through (no pink meat!) – this is your bolognese

Chop your tomato[es] finely

Chop your basil finely, including the stalks

Add the chopped tomato to a bowl with your balsamic vinegar, chopped basil and a drizzle of olive oil

Season with a pinch of salt and pepper and mix it all together – this is your balsamic tomato & basil salad

Once golden, shape the fries into 1 pile per person and top with the bolognese and your grated Italian hard cheese

Return the tray[s] to the oven for 6-8 min or until the cheese has melted – these are your bolognese loaded fries
