BLT Salad With Croutons
For this iconic sando-inspired salad, you'll toss lettuce and tomatoes in a creamy oregano dressing before serving over roast potatoes. Top with croutons, sprinkle over crispy bacon and dig in.

Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Chop your potato[es] (skin on) into small, bite-sized pieces

Add the chopped potato to a baking tray (or two!) with a drizzle of olive oil and a pinch of salt and pepper
Put the tray[s] in the oven for 20-25 min or until golden and crisp

Whilst the potato is cooking, chop your tomato[es] into wedges
Wash your lettuce, then pat it dry with kitchen paper
Tear the outer lettuce leaves into rough, bite-sized pieces and shred the inner core[s]
Tear your ciabatta[s] into small, bite-sized pieces

Add your smoked streaky bacon to a tin foil-lined baking tray (or two!)
Put the tray[s] in the oven for 12-15 min or until golden and crispy

Once the potato is golden, remove the tray[s] from the oven and top with the torn ciabatta
Top with a generous drizzle of olive oil, then return the tray[s] to the oven for a further 7-8 min or until golden and crisp

Meanwhile, combine your mayo and white wine vinegar in a large bowl with your dried oregano, 2 tbsp [3 tbsp] [4 tbsp] olive oil and a pinch of salt, pepper and sugar – this is your creamy dressing

Add the torn lettuce and shredded inner core to the bowl of dressing with the tomato wedges and a pinch of salt and give everything a good mix up – this is your salad

To build your salad, add the roast potato to a bowl topped with the salad, croutons and crispy bacon – this is your BLT salad with croutons
