BBQ Sweetcorn & Mozzarella Pizza
Take it easy with this fully-loaded pizza. You'll top BBQ sauce-smothered pizza bases with sweetcorn, red onion and torn mozzarella before popping them into the oven. Bake till melty and serve hot.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ gas 6
Put a large baking tray (or two) in the oven to heat up (this will stop the pizza bottoms from going soggy!)
Drain your mozzarella, then pat and squeeze as much liquid out as you can with kitchen paper
Tear the drained mozzarella into rough, bite-sized pieces

Drain your sweetcorn

Add your bbq sauce to a bowl with your tomato paste and a generous pinch of salt and pepper
Add 2 tbsp [3 tbsp] [4 tbsp] cold water and stir it all together – this is your bbq base

Peel and slice your shallot[s] finely

Remove the heated tray[s] from the oven and add your pizza base[s]
Spread the bbq base evenly over the pizza base[s] with the back of a spoon

Top with the torn mozzarella, drained sweetcorn and sliced shallot

Put the tray[s] in the oven for 13-15 min or until the cheese has melted and the base is crisp – this is your bbq sweetcorn & mozzarella pizza[s]

Serve the bbq sweetcorn & mozzarella pizza
