BBQ Pulled Pork Hog Roast Sandwich With Smoky Stuffing
Go the whole hog with this BBQ pork roast sando. You'll load brioche buns with tender BBQ pulled pork, smoky apple sauce, smoked paprika stuffing and creamy apple slaw. Serve it with crispy roast potatoes and dig in.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Transfer your BBQ pulled pork and any juices to an oven-proof dish
Cover with tin foil and put the dish in the oven for an initial 30 min

Chop your waxy potatoes in half, lengthways
Add the chopped potatoes to one side of a baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper and give everything a good mix up
Put the tray[s] in the oven for an initial 15 min – these are your crispy roast potatoes

Boil half a kettle
Chop your apple[s] (skin on) in half and discard the core
Grate half the apple[s], then cut the remaining apple into matchsticks
Peel and finely chop your shallot[s]
Peel and finely chop (or grate) your garlic

Add the grated apple to a pot with with a lid your smoked salt, 80ml [105ml] [120ml] cold water and 1 tsp [1 1/2 tsp] [2 tsp] sugar
Cook, covered, over a medium heat for 10-12 min or until the apple has softened
Once done, mash the softened apple till smooth and set aside until serving – this is your apple sauce

Combine your panko breadcrumbs in a bowl with the chopped shallot, garlic, ground smoked paprika, 50ml [75ml] [100ml] boiled water and a pinch of salt and pepper
Give everything a good mix up and divide into 1 patty per person – this is your smoky stuffing
Once the potatoes have had an initial 15 min, add the smoky stuffing to the other side of the tray[s] and return to the oven for 10-12 min or until everything is golden and crispy

Combine your carrot & cabbage slaw mix with the apple matchsticks, mayo, white wine vinegar, a pinch of sugar and a generous grind of pepper in a large bowl – this is your apple slaw
Slice your brioche bun[s] in half (if required!)
Heat a large, wide-based pan (preferably non-stick) over a medium heat and add the brioche halves, cut-side down, and cook for 2-3 min or until toasted and charred, set aside until serving

After an initial 30 min, remove the dish with the pulled pork from the oven and discard the tin foil
Pull the BBQ pulled pork apart using two forks and mix everything through the juices
Return the dish to the oven for 5-6 min further or until the sauce has been absorbed and the pork has started to crisp

To build, fill the toasted brioche bun with the apple sauce, smoky stuffing, BBQ pulled pork, apple slaw and your crispy onions – this is your BBQ pulled pork hog roast sandwich
Serve the BBQ pulled pork hog roast sandwich with the crispy roast potatoes and any remaining apple slaw to the side
