BBQ Butter Chicken With Sweet Potato Mash And Chilli Greens
Gather your kitchen helpers, this buttery BBQ chicken is perfect for Dad. You'll top chicken with smoky breadcrumbs before popping in the oven. Serve up with chilli green beans and sweet potato mash for the adults or skip the chilli for kids. Under 600 calories.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and take your chicken out of the fridge, open the packet and let it air
Take 30g [45g] [60g] butter out of the fridge and set aside to soften
Cover your chicken breast portion[s] with cling film and bash with a rolling pin until evenly flattened – this is your chicken escalope

Peel and chop your sweet potato[es] into small bite-sized pieces
Slice your spring onion[s] finely
Slice half your green chilli[es] into rounds and set aside for garnish, then chop the remaining chilli finely, removing the seeds
Trim your green beans

Boil a full kettle
Combine your panko breadcrumbs with your ground smoked paprika and a pinch of salt and pepper – these are your smokey breadcrumbs
Combine 20g [30g] [40g] of the softened butter with your BBQ sauce and season with a pinch of salt – this is your BBQ butter

Add the chicken escalope[s] to a baking paper-lined baking tray (or two!)
Spread the BBQ butter evenly over the chicken, then top with the smokey breadcrumbs and reserve the bowl
Put the tray[s] in the oven for 20 min or until cooked through and golden (no pink meat!) – this is your BBQ butter chicken

Whilst the chicken is in the oven, add the chopped sweet potato to a pot with plenty of boiled water and bring to the boil over a high heat
Once boiling, reduce the heat to medium and cook for 12-15 min or until fork-tender, once done, drain and return to the pot to steam dry
Reboil half a kettle

Add the chopped green chilli, sliced spring onion and your white wine vinegar to the reserved bowl with 1/2 tbsp [1 tbsp] [1 1/2 tbsp] olive oil
Season with a pinch of salt and sugar and give everything a good mix up – this is your green chilli dressing

Add your trimmed green beans to a pot, cover them with boiled water (just enough to cover them) with a pinch of salt
Bring to the boil over a high heat and cook for 5-6 min or until tender
Return the potatoes to a low heat with the remaining butter and a splash of milk
Season with a generous pinch of salt and mash until smooth – this is your sweet potato mash

Serve the BBQ butter chicken with the green beans and sweet potato mash to the side
Drizzle the green chilli dressing over the green beans and garnish with the chilli rounds – these are your chilli greens
Tip: Cooking for kids? Leave the dressing and chilli rounds!
