BBQ Beans On Toast Veggie Burger With Crispy Potatoes
Bite into a blast from the past like never before because we've given burgers a baked bean-loaded twist. You'll sizzle veggie patties topped with melty cheese. Then, sandwich them between layers of smoky BBQ beans and crispy toast. It's magic.

Olive oil, Pepper, Salt, Vegetable oil (or dietary alternatives)
Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Slice your potatoes (skins on) into thin discs
Add the potato discs to a baking tray with a drizzle of vegetable oil and a pinch of salt and pepper
Give everything a good mix up and put the tray in the oven for 20-25 min or until golden and crisp – these are your crispy potatoes

Meanwhile, cut your lettuce into quarters lengthways, then give them a wash and pat dry with kitchen paper
Chop your chives finely
Slice your cheddar cheese into 3 slices per person

Line a separate baking tray with tin foil
Add your ultimate vegan burger patties to one side of the lined tray and put in the oven for 10-12 min or until cooked through

Combine your mayo, chopped chives and half your white wine vinegar (you'll use the rest later!) in a small bowl – this is your chive mayo

Once the patties are cooked through, remove the tray from the oven and top the ultimate vegan burger patties with the cheese slices
Slice your ciabatta[s] in half and add them to the other side of the tray
Return the tray[s] to the oven for 3-4 min or until the cheese has melted and the ciabattas are toasted

Combine your baked beans and BBQ sauce in a small heat-proof bowl
Cook the beans in the microwave for 1 min, then stir them and return them to the microwave for a further 1 min, or until piping hot – these are your BBQ beans

To build your burgers, spoon the BBQ beans on the base of each toasted ciabatta base, then top with a cheeseburger veggie patty and a toasted ciabatta lid – these are your BBQ beans on toast veggie burgers

Serve the BBQ beans on toast veggie burger with the crispy potatoes, lettuce quarters and chive mayo to the side
Dress the lettuce quarters with the remaining white wine vinegar, 1 tbsp [1 1/2 tbsp] [2 tbsp] olive oil and a good grind of pepper
