Bangers & Lentils
Originally one of those dishes that you'd expect to find in a rural Italian family kitchen, our version is a wholesome, hearty bowl of bliss. The dish is based on a traditional meal served in Italy on New Year's Day — with the mass of lentils representing abundant wealth and prosperity.

Instructions for 2 portion recipe.
Pre-heat the oven to 230°C/ 210°C (fan)/ 450°F/ Gas 8
Grease an oven tray with 1-2 tbsp of oil and add the sausages
Put in the oven for 25 min or until browned
Rinse the lentils
Tip: Watch out for any stones in the lentils that may occur naturally in the harvesting process
Add the lentils and rosemary sprig to a pot with 1L (1.5L) of water and bring to a boil
Once boiling, reduce the heat and simmer for 25-30 min or until tender
Peel and chop the onion finely
Crush the garlic, peel and chop finely
Add 1/2-1 tbsp of olive oil to a pan on a medium heat
Once the oil is hot, add the onion, garlic, 1 tsp (2 tsp) of sugar and salt to taste
Reduce the heat to low and cook for 20 min, or until caramalised
Meanwhile, chop the cherry tomatoes into halves
Chop the parsley finely
Add the cherry tomatoes and red wine vinegar to the onion pan
Cook for 10 min, then add 30ml (60ml) of water to form a relish-like consistency
Break the mixture with a masher (alternatively with a slotted spoon) to form a relish
Once the lentils are done, drain well
Remove and discard the rosemary stalk
Add 1-2 tbsp of olive oil and chopped parsley to the lentils
Season generously with salt and black pepper
Remove the sausages from the oven
Cut the sausages diagonally into bite size pieces
Serve the relish on top of the lentils, with the sliced sausages piled on top
