Baked Greek Cheese With Spiced Couscous

This Meditarenaean medley is quick and easy. You'll top cumin-spiced couscous, packed full of dates and spinach with roasted pepper and baked Greek cheese. Finish with a drizzle of tangy honey dressing and dig in.

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and boil a kettle

Chop your pepper[s] into bite-sized pieces

Transfer the chopped pepper to a tin foil-lined baking tray with a drizzle of olive oil and a pinch of salt and pepper

Put the tray in the oven for an initial 15 min or until the pepper is beginning to char

Meanwhile, dissolve your vegetable stock mix in 200ml [300ml] [400ml] boiled water

Add your couscous and ground cumin to a heatproof bowl with the stock and a generous pinch of salt

Cover with a tea towel and set aside until all of the stock has been absorbed

Once the pepper is beginning to char, remove the tray from the oven and add your Greek cheese with a drizzle of olive oil and a grind of black pepper

Return the tray to the oven for 5-6 min further or until the Greek cheese has softened

Once softened, remove the tray from the oven and let cool slightly – this is your baked Greek cheese & roasted pepper

While the Greek cheese is cooking, wash your spinach, then add to a colander and pour boiled water all over it so that it starts to wilt

Rinse the wilted spinach under cold running water until it's cool

Once cool, squeeze as much water out of the spinach as you can then roughly chop

Once the couscous is done, add the chopped spinach and chopped dates to the cooked couscous and mix it all together – this is your spiced couscous

Add your honey and red wine vinegar to a bowl with 2 tbsp [3 tbsp] [4 tbsp] olive oil and a pinch of salt – this is your honey dressing

Top the spiced couscous with the baked Greek cheese & roasted pepper

Drizzle over the honey dressing
