Bacon, Courgette & Cherry Tomato Linguine

You had us at 'golden-fried bacon'... plus courgette and juicy cherry tomatoes. Clotted cream brings all the flavours together in creamy harmony, and chopped basil adds a fresh finish. This fabulously simple pasta dish is ready in a flash and sure to be a new favourite.

Ingredients for 2 people

5g basil
5g basil
125g cherry tomatoes
125g cherry tomatoes
1 courgette
1 courgette
1 tbsp dried oregano
1 tbsp dried oregano
200g linguine
200g linguine
135g British dry cured smoked streaky bacon
135g British dry cured smoked streaky bacon
1/2 tsp dried chilli flakes
1/2 tsp dried chilli flakes
40g Cornish clotted cream
40g Cornish clotted cream
30g pitted black olives
30g pitted black olives
1 garlic clove
1 garlic clove
1 brown onion
1 brown onion

You'll also need

Olive oil, Pepper, Sugar (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

Boil the kettle 

Finely chop the smoked streaky bacon

Dice the brown onion[s]

Peel and finely chop (or grate) the garlic 

Slice the courgette[s] into rounds

Heat a wide-based pot (preferably non-stick) with a drizzle of vegetable oil over a medium heat 

Once hot, add the diced onion and chopped bacon and cook for 5-7 min

Add the courgette to the pan for another 2-3 mins or until soft and lightly coloured

Meanwhile, add the linguine to a pot of boiled water with a large pinch of salt and bring to the boil over a high heat

Cook the linguine for 8-10 min or until cooked with a slight bite

Once done, drain the linguine, reserving 300ml [600ml] of the starchy pasta water

Once the courgette is lightly browned, add the cherry tomatoes, garlicdried oregano and chilli flakes (Can't handle the heat? Go easy!) and cook for 1 min

Add the drained linguine with the reserved starchy pasta water and cook until the liquid thickens slightly and the tomatoes are starting to break down

Meanwhile, chop the basil finely, including the stalks

Slice the black olives finely

Once the linguine is cooked, remove it from the heat and stir in half of the chopped basil, the clotted cream and the sliced olives

Serve the bacon & courgette pasta in bowls, sprinkle with the remaining chopped basil and season with a good grind of pepper
