Apple Crumble-Inspired Cinnamon Toast
Wake up on the sweeter side with this apple crumble-style toast. You'll spread brioche with cinnamon butter before loading it with coconut flakes, spiced apple and sultanas. Add some toasted hazelnuts for crunch and dig in.

Rise and shine! Before you begin…
Busy morning ahead? Some of this recipe can be prepped ahead (if you like!)
Make steps 2-3 the night before and store in an airtight container, then finish the rest in the morning, and enjoy within 24 hours
Skim through these steps and get all your equipment ready, then wash your fruit and veg

Now, let's get started!
Chop your hazelnuts roughly

Heat a large, dry, wide-based pan (preferably non-stick) over a medium heat
Once hot, add your chopped hazelnuts and coconut flakes to the pan and cook for 2-3 min or until toasted and lightly golden
Once toasted, transfer to a plate and set aside – these are your toasted nuts
Tip: Watch them like a hawk to make sure they don't burn!

Quarter and slice your apple[s] finely, discard the core[s]

Combine your ground cinnamon with 1 tbsp [1 1/2 tbsp] [2 tbsp] sugar in a small bowl – this is your cinnamon sugar

Add half the cinnamon sugar (you'll use the rest later!) to a medium bowl with the sliced apple and your sultanas and toss to coat – this is your spiced apple & sultanas

Slice your brioche bun[s] in half (if required!)
Place your brioche halves in the toaster for 1-2 min or until lightly toasted
Add a generous knob of butter to the bowl with the remaining cinnamon sugar and mix until fully combined – this is your cinnamon butter
Spread the toasted brioche with the cinnamon butter – this is your cinnamon toast

To build, top the cinnamon toast with your cultured coconut, spiced apple & sultanas and toasted nuts – this is your apple crumble-inspired cinnamon toast
