Apple & Cherry Cheesecake Pancakes
Calling all brunch lovers, this one's straight from the Big Apple. You'll stack fluffy buttermilk pancakes with cheesecake filling, apple compote and cherry sauce then top with cinnamon granola crumble. It'll be love at first bite.

Rise and shine! Before you begin…
Skim through these steps and get all your equipment ready, then wash your fruit and veg
Once done, simply dig in or wrap up ready for your day!
Now, let's get started!
Chop your apple[s] into wedges (no need to peel!) and remove the core
Slice the wedges, then chop into small, bite-sized pieces
Boil half a kettle
Heat a small pot over a medium heat
Once hot, add the chopped apple to the pot with 50ml [65ml] [85ml] cold water
Cook for 6-7 min or until the apple has softened but still holding its shape (add another splash of water if it's looking a little dry!)
While the apple is cooking, combine 50ml [65ml] [85ml] boiled water with 1 tbsp [1 1/2 tbsp] [2 tbsp] sugar and mix until dissolved
Once dissolved, add your clotted cream and soft cheese and whisk until smooth and thick – this is your cheesecake filling
Combine your granola and ground cinnamon in a food processor, then blitz until you get a crumble texture – this is your granola cinnamon crumble
Once the apples are cooked, add half your cherry sauce (you'll use the rest later!) and give everything a good mix up – this is your apple & cherry topping
Once everything is ready, add your buttermilk pancakes to a plate and pop in the microwave for 30 secs on high or until warmed through
Load the pancakes with the cheesecake filling, then top with the granola cinnamon crumble and the apple & cherry topping
Drizzle over the remaining cherry sauce in a heart shape
