2 Meals: Sesame Pork Udon & Pork & Egg Fried Rice
Cook smart, not hard with two spicy pork dishes. For meal one, serve sesame pork stew with udon and sweet pea pods. For meal two, whip up pork and egg fried rice with peas and sriracha. Instructions for 2 [for 3] [for 4] portion recipe.
Meal 1:
Preheat the oven to 220°C/ 200°C (fan)/ gas 7, then boil a kettle then heat a large, wide-based, hob-safe oven-proof casserole dish with a matching lid with a drizzle of vegetable oil over a medium heat
Note: Make sure your dish is oven-proof and safe to use on the hob. Don't have one? Start cooking in a large, wide-based pan then transfer to an oven-proof dish and cover tightly with tin foil
Once hot, add your mince (remove the paper if required!) and cook for 3-4 min or until beginning to brown, breaking it up with a wooden spoon as you go

Meanwhile, top, tail, peel and chop your carrot[s] into bite-sized pieces then peel and chop your brown onion[s] into wedges, once browned, add the chopped carrot and onion wedges to the dish and cook for 3-4 min or until beginning to soften
Once softened, add your ginger & garlic paste, ketjap manis, soy sauce, toasted sesame oil, half your sriracha (you'll use the rest tomorrow!) and 1 tbsp [1 1/2 tbsp] [2 tbsp] flour and cook for 1 min
Add 400ml [520ml] [640ml] boiled water and bring to the boil over a high heat, once boiling, cover with a lid and put the dish in the oven for an initial 25-30 min or until the vegetables are tender, the sauce has thickened and the mince is cooked through (no pink meat!) – this is your sesame mince

Reboil a full kettle
Once the sesame mince is nearly cooked, add your udon noodles to a large bowl, cover them with boiled water
Set aside to soak for 4-5 min
Tip: Gently separate the noodles with a fork!
Drain the soaked noodles

Once cooked, remove the dish from the oven and set aside half the sesame mince (you'll eat this tomorrow!) to cool down quickly (within 2 hours max), then refrigerate in a covered container. Enjoy within 24 hours
Add your sweet pea pods to the dish with the sesame mince, give everything a good mix up, then return the dish to the oven for 2-3 min or until the sweet pea pods has slightly softened
Once cooked, add the soaked noodles to the dish and mix it all together until the noodles are fully coated in the sauce – this is your sesame mince udon
Serve the sesame mince udon and garnish with your toasted sesame seeds
Dig in!

Meal 2:
Add your white long grain rice to a pot with a lid with 225ml [300ml] [450ml] cold water and bring to the boil over a high heat
Once boiling, reduce the heat to very low and cook, covered, for 12-15 min or until all the water has absorbed and the rice is cooked
Once done, remove from the heat and set aside (lid on) to steam until serving

Meanwhile, trim, then slice your spring onion[s] on the diagonal
Transfer the remaining sesame mince to a pan and cook over a medium-high heat, stirring occasionally, for 4-5 min or until it is piping hot throughout
You can only reheat your food once, then enjoy straight away

Once cooked, add your blanched peas and cooked rice to the pan with the sesame mince and gently stir it all together until the rice is coated in the sauce
Once coated, push the rice to one side of the pan and crack your egg[s] into the other side
Stir the egg[s] with a wooden spoon to break the yolk[s] and cook for 1-2 min until it resembles scrambled egg, then mix it all through the rice – this is your sesame mince egg fried rice

Serve the sesame mince & egg fried rice in a bowl and drizzle with the remaining sriracha (can't handle the heat? Go easy!) – this is your sriracha mince & egg fried rice
Garnish with the sliced spring onion
