2 Meals: King Prawn Massaman & Fragrant Prawn Rotis

Oh man, this massaman's got it all. For meal one, serve prawn and sweet potato curry with rice and crispy onions. For meal two, load into rotis with peppers and a coriander & lime salsa. Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Meal 1:

Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and boil a kettle

Chop your potato[es] into bite-sized pieces

Peel and chop your sweet potato[es] into bite-sized pieces

Peel and chop your brown onion[s] into wedges

Peel and roughly chop your garlic

Heat a large, wide-based hob-safe oven-proof casserole dish with a matching lid with a drizzle of vegetable oil over a high heat

Once hot, add the onion wedges and cook for 2-3 min or until slightly softened

Note: Make sure your dish is oven-proof and safe to use on the hob. Don't have one? Start cooking in a large, wide-based pan then transfer to an oven-proof dish and cover tightly with foil

Tip: Cooking for 4 or more? Use 2 casserole dishes!

Once the onion has softened, reduce the heat to medium and add your massaman paste, red Thai curry paste, tomato paste and chopped garlic and cook for 30 secs or until fragrant

Add your creamed coconut and 1 tbsp [1 1/2 tbsp] [2 tbsp] flour and give everything a good mix up

Add the chopped potato and diced sweet potato with 650ml [850ml] [1.1L] boiled water and a pinch of sugar, give everything a good mix up

Bring to the boil over a high heat and cover with a lid, then put the dish[es] in the oven for 25-30 min or until the potatoes are tender – this is your massaman curry

Reboil the kettle

Meanwhile, add your white long grain rice to an oven-proof dish with 300ml [390ml] [600ml] boiled water

Cover tightly with tin foil and put the dish in the oven for 25-30 min or until all the water is absorbed and the rice is cooked – this is your baked rice

Once the potatoes are tender, season with a generous pinch of salt and stir it all together, then transfer half the fragrant massaman to a covered container (you'll eat it tomorrow!) and cool down quickly (within 2 hours max)

Drain and add half your king prawns (you'll use the rest tomorrow!) to the casserole dish[es] and stir it all together

Return the dish[es] to the oven and cook for a further 4-5 min, uncovered, or until the prawns are cooked through – this is your fragrant king prawn massaman

Serve the king prawn massaman with the baked rice to the side and garnish with your crispy onions

Dig in!

Meal 2:

Deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and roughly dice

Heat a pot over a high heat with a drizzle of vegetable oil, once hot, add the diced pepper and cook for 3-4 min or until softened

Once softened, add the remaining king prawn massaman to a pot and cook over a medium-high heat for 4-5 min or until it is piping hot throughout, stirring occasionally

You can only reheat your food once, then enjoy straight away

Once hot, drain and add the remaining king prawns to the pot and cook for 4-5 min or until cooked through – this is your fragrant pepper & king prawn curry

Meanwhile, chop your tomato[es] finely

Chop your coriander finely, including the stalks

Combine your green tomato chutney, chopped tomato and coriander in a bowl with a drizzle of olive oil, a pinch of salt, pepper and a pinch of sugar – this is your tomato & coriander chutney

Add your rotis[s] to a toaster for 1-2 min or until warmed through

Load the fragrant pepper & king prawn curry on top of the warmed roti[s]

Top with the tomato & coriander chutney
