2 Meals: Cardamom & Orange Overnight Oats & Cranberry & Apple Oats
Be a breakfast prep champ with these overnight oats. For meal one, top cardamom-infused oats with orange, pecans & maple. For meal two, stir through apple and top with cranberries & pistachios. Instructions for 2 [for 3] [for 4] portion recipe.
The night before:
Crush your cardamom pods open by squashing them with the side of a knife
Add 300ml [450ml] [600ml] milk to a pot over a low heat with 2 tsp [3 tsp] [4 tsp] sugar and the crushed cardamom pods and leave to infuse for 4-5 min – this is your cardamom infused milk

Slice half your orange[s] in half (you'll use the rest tomorrow!)
Add your oats to a large bowl (or lidded food-safe container) with your natural yoghurt, the juice of the sliced orange[s] and the cardamom infused milk
Give everything a good mix up and store, covered, in the fridge overnight – this is your cardamom overnight oats

Morning 1:
Crush your pecan nuts in its bag with a rolling pin (keep them in the bag so you don't lose any!)
Tip: If you don't have a rolling pin, just chop them roughly!
Heat a large dry pan over a medium heat
Once hot, add the crushed pecan nuts and cook for 2-3 min or until toasted and lightly golden
Tip: Watch them like a hawk to make sure they don't burn!

Slice the remaining orange[s] into segments

Serve half the cardamom overnight oats (you'll use the rest tomorrow!) and top with your orange segments and toasted pecan nuts
Drizzle with half your maple syrup (you'll use the rest tomorrow!)
Dig in!
Tip: Watch out for any cardamom pods!

Morning 2:
Crush your pistachios in its bag with a rolling pin (keep them in the bag so you don't lose any!)
Tip: If you don't have a rolling pin, just chop them roughly!
Heat a large dry pan over a medium heat
Once hot, add the crushed pistachios and cook for 2-3 min or until toasted and lightly golden
Tip: Watch them like a hawk to make sure they don't burn!

Grate your apple[s] (skin on) and discard the core[s]
Add the grated apple to the remaining cardamom overnight oats and mix it all together – this are your apple overnight oats

Serve the apple overnight oats and top with your dried cranberries and toasted pistachios
Drizzle with the remaining maple syrup
