2 Meals: Apple-Berry Granola Pot & Orange-Berry Bowl
Give breakfast the batch cook treatment with these fruity granola pots. For meal one, top with apple and berry compote. For meal two, spruce it up with an orange-spiked berry compote. Morning 1:
Heat a large, dry, pan over a medium heat
Once hot, add your pumpkin seeds and cook for 2-3 min or until toasted and lightly golden
Tip: Watch them like a hawk to make sure they don't burn!
Once toasted, set the toasted pumpkin seeds aside on a plate
Return the pan to the heat and add a knob of butter with your ground cinnamon and cook for 1 min or until fragrant
Once fragrant, add your granola, maple syrup and toasted pumpkin seeds to the pan and give everything a good mix up, then set aside to cool until serving – this is your pumpkin seed & cinnamon granola
Dice your apple[s] finely (skin on) and discard the core[s]
Combine the diced apple with half your mixed berry compote (you'll use the rest tomorrow!) in a bowl – this is your apple & berry compote mix
To build the yoghurt pot, add the apple & berry compote mix to a bowl with half your natural yoghurt (you'll use the rest tomorrow!) and half the pumpkin & cinnamon granola (you'll use the rest tomorrow!) to the side – this is your apple & berry compote granola pot
Tip: Whip this up the night before! Refrigerate and enjoy within 24 hours for a ready to go breakfast
