2-in-1 Peri Peri Chicken x Caesar Salad

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Day 1:

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Before you start cooking, take your chicken out of the fridge, open the packet and let it air

Chop your potatoes (skins on) into wedges

Add the potato wedges to one side of a baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper and give everything a good mix up

Put the tray[s] in the oven for an initial 5-8 min

Meanwhile, peel and finely chop (or grate) your garlic

Combine your peri peri spice mix with your honey, the juice of half your lemon[s] (you'll use the rest later!) and a generous drizzle of olive oil

Add a generous pinch of salt and pepper, then give everything a good mix up – this is your honey peri peri marinade

Add your chicken thighs to the marinade and give it a good mix up until fully coated – this is your marinated chicken

Once the wedges have had an initial 5-8 min, add the marinated chicken to the other side of the tray[s] with a drizzle of vegetable oil

Tip: Cooking for 3 or more? Use 2 trays!

Return the tray[s] to the oven for a further 17-18 min, or until the wedges are crispy and the chicken is cooked through (no pink meat!) – this is your honey & peri peri chicken and wedges tray bake

Meanwhile, combine your mayo with the remaining lemon juice and a pinch of sugar, salt and pepper – this is your lemon mayo

Once everything has 8 min remaining, boil a little water in a kettle and trim your green beans

Add the trimmed green beans to an oven-proof dish with a small knob of butter, your grated garlic, a small pinch of salt and a splash of boiled water

Put the dish in the oven for 7-8 min or until the green beans are tender with a bite – these are your garlicky green beans

Serve half the honey peri-peri chicken (you'll eat the rest tomorrow!) with the wedges

Serve the garlicky green beans to the side with half the lemon mayo (you'll use the rest tomorrow!)

Enjoy!

Cool the remaining honey peri-peri chicken quickly (within 2 hours max) and refrigerate with the remaining lemon mayo in covered containers. Enjoy within 24 hours

Day 2:

Wash your lettuce, then pat it dry with kitchen paper and roughly shred

Combine the remaining lemon mayo with your Dijon mustard and half the grated Italian hard cheese (save the rest for garnish!)

Add a splash of cold water, a little drizzle of olive and a generous grind of pepper and give everything a good mix up – this is your Caesar dressing

Squeeze your pouch[es] of glorious grains to separate the grains

Tear the top corner of the pouch[es] (just a little!) and microwave for 2 min or until piping hot

Tip: If you're cooking two or more pouches, pop them in together but increase the microwave cook time accordingly

Combine the warmed grains with half your Caesar dressing (you'll use the rest later!) and a small pinch of salt in a large bowl, then add the chopped lettuce and toss until well combined – this is your Caesar grain salad

8.

Slice the remaining honey peri-peri chicken and serve over the Caesar grain salad

Drizzle with the remaining Caesar dressing and sprinkle over the remaining grated Italian hard cheese

Dig in!
