10-Min Spiced Tofu Sofritas Bowl

This satisfyingly spicy sofritas bowl combines scrambled tofu with rice, kidney beans and a rich, smoky sauce. Top with tomato and fried onion to serve. Sizzle, sprinkle, done!

Ingredients for 2 people

1 bag of fried onions (15g)

Before you begin...

Get all your ingredients and equipment ready

Skim through these steps, then wash your fruit and veg

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)

Now, let's get started!

Boil half a kettle

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium high heat

Add the ground cumin, smoked paprika, ground coriander and cayenne pepper (can't handle the heat? Go easy!) and cook for 30 secs or until the spices are fragrant

Once fragrant, add the tomato paste and stir everything together

Drain the tofu, then crumble it into the pan in rough bite-sized pieces and give everything a good mix up

Add the soy sauce and 100ml [180ml] boiled water to the pan, mix everything together and cook for 2-3 min or until the tofu begins to soak up the sauce

Meanwhile, drain and rinse the kidney beans

Squeeze the pouch[es] of steamed brown basmati rice to separate the grains

Add the steamed basmati rice and kidney beans to the pan with a splash of water, stir everything together and cook for 3-4 min or until the rice is warmed through – this is your spiced tofu sofritas

Whilst the rice is cooking, finely dice the tomato[es]

Serve the spiced tofu sofritas in bowls and top with the diced tomato and fried onions

Roughly tear over the coriander and season with a grind of black pepper
